Pineapple Raisin Cauliflower Stir Fried Rice

Ingredients

  • 1 head of cauliflower (about 6 cups riced)
  • 1/4 cup red pepper
  • 1/4 cup carrots
  • 2 garlic cloves
  • 1 cup pineapple
  • 1/2 cup Sun-Maid Natural Raisins
  • 2 eggs
  • 3 tablespoons sesame oil
  • 5 tablespoons soy sauce
  • 2 green onions
  • salt and pepper to taste
  • Option to add 1/2 pound of chicken breasts or thighs

Directions

    Trim and cut one head of cauliflower into smaller pieces. Place cauliflower in the food processor and pulse until cauliflower is crumbled and similar in appearance to “rice”.

    Cut carrots ¼” dice pieces

  • 3

    Cut Red peppers into ¼” dice pieces

  • 4

    Mince garlic cloves

  • 5

    Cut pineapple into ½” dice pieces

  • 6

    Using a large skillet or a wok, heat 3 tablespoons of sesame oil

  • 7

    Sauté minced garlic until lightly brown and fragrant, about 1 minute

  • 8

    Add diced carrots and red pepper to sauté until tender about 3 minutes

    Add Cauliflower rice (about 6 cups) to sauté pan and cook until cauliflower is tender about 10 minutes.

    Add pineapple and raisins to sauté pan

  • 11

    Scramble eggs in a separate pan and add to sauté pan with heated cauliflower rice mixture

  • 12

    Add 5 tablespoons of soy sauce

  • 13

    Finish dish with green onion

  • 14

    Add salt and pepper to taste

  • 15

    Option: Add cooked chicken breasts or thighs for added protein
