Seared Pork Chops with Apple Raisin Compote

Ingredients

For the pork chops

  • 2 large, bone in pork chops
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • Salt and pepper to taste

For the Sun-Maid Raisin Compote

  • 2 Tbsp. butter
  • 1 shallot, sliced thin
  • 1 granny smith apple, diced
  • Zest of 1 orange
  • Juice of 1 orange
  • 2 tsp. pumpkin pie spice
  • ⅛ tsp. fresh nutmeg
  • ½ cup Sun-Maid Raisins

    Preheat oven to 350. Begin by seasoning the pork chops with the salt, pepper, onion powder and garlic powder and set aside. Preheat a large cast iron skillet over medium high heat, and add a little neutral oil, then sear the pork chops until they are well browned, about 3-5 minutes per side. Transfer the pork chops to a sheet tray and place in the oven to finish cooking, about another 12-15 minutes or until they have reached 145 degrees internally.

    Meanwhile, reduce the heat to low and In the same skillet, melt the butter and begin sauteing the shallots for a few minutes. Add the diced apple, orange zest, orange juice, pumpkin pie spice and nutmeg and stir to combine. Cook, stirring frequently until the apples begin to soften, about 5 minutes. Add a splash of water if necessary. Add the raisins and toss to combine.

    Remove the pork chops from the oven and allow to rest for a few minutes. Spoon the raisin compote over top and enjoy.
